From what i've seen its about 50/50 one stick vs two sticks in the pro scene. Just pick whatever you're most comfortable with, there is pros and cons to both. I play one stick, and I like that I have a free thumb for all my buttons. Some people who use two sticks play claw depending on their button ...

Post a screenshot of your graphics settings and computer specs.

Settings might just be a bit high for your pc. Ruts have a lot more geometry going on compared to just flat ground so if your ground geo is too high it can cause this.

I recently moved and whenever I try to play online I get like 15 minutes max connected to the server before my internet crashes. Dp, even sitting as close as I can, I still get a fisheye effect on fovs that allow me to see the bars of the bike. Not an issue on 16:9 but even on normal widescreens it'd be nice to be able to adjust distance

Yeah you can turn off LOD's in your graphics control panel but that's by design, the further away something is the less detail/poly's you'll get.
