Deleting jumps
Is there a way to delete a jump without ruining the elevation to a track?

Yeah, the undo button.
If you've ran out of undo levels, you just have to smooth out the track and then rebuild the jump using the linear paint tool. Linear paint builds your gradient at the exact height of the points you put on your gradient. So if you want to use the linear paint tool, I recommend using "set from terrain" and then building your gradient off of that. There's no way to perfectly delete a jump once you've ran out of undo levels. But, you can get pretty close to what you were working with using the smooth and linear paint tool.
