If you go into a blank track on time trial it will put you in the bottom right corner of the map facing the top when you dont have timing gates set. You could build a jump lined up with this starting point and turn on "Backing up aborts attempt", so you can go hit your jump and just hit the back up button so you're ready to hit it again.
